One of the greatest Italian dishes: simple yet divine!
Ingredients for 4 people:
- Canned Peeled Tomatoes 1 can
- Rigatoni pasta 360 g
- Guanciale (pig cheek) 150 g
- Pecorino Cheese 70g
Remove the rind and cut the guanciale as stripes, cook over a low flame until brown & crispy, then put aside the cooked guanciale. Leave a little oil in the pan, poor in the tomatoes and cook it the time your pasta will be in the boiled water. Cook the pasta al dente, drain the pasta directly inside the tomato sauce and add the pecorino cheese powder. Turn off the flame and sauté the pasta.
Serve, add the crispy guanciale on top, some black pepper et voilà your amatriciana pasta is ready!
Tips: you can use buccattini or spaghetti pasta according to your preferences.
